Sweet! A Potato Recipe That's Sweet & Fulfilling

Even one of the traditional dishes can be made lighter and you wouldn't even know the difference. Read on to see how this naturally sweet dish filled with vitamins can still be delicious.

2 and 1/4 pounds of sweet potatoes maybe three big ones

3 egg whites

3 tbsp maple syrup

1 tsp vanilla extract

Topping is 1/4 cup chopped pecans

1 tbsp brown sugar

1 tbsp butter melted

1/2 tsp cinnamon

1/3 cup dried apricots and 1/3 cups dried cherries

Cube and peel sweet potatoes. Put in dutch oven cover with water and boil simmer for 15 to 20 minutes. Drain and mash. Stir in the egg whites, maple syrup and vanilla.

Put in 8 inch square baking dish. Spray Pam in dish. Combine the topping ingredients (everything except cherries and apricots) then sprinkle over the top. Bake on 350 for half an hour uncovered. Pull out after half an hour then sprinkle with apricots and cherries and bake for 5 to 7 more minutes.
