 2 and 1/4 pounds of sweet potatoes maybe three big ones

3 egg whites

3 tbsp maple syrup 

1 tsp vanilla extract

Topping is 1/4 cup chopped pecans

1 tbsp brown sugar

1 tbsp butter melted

1/2 tsp cinnamon

1/3 cup dried apricots and 1/3 cups dried cherries
